Rachel is our most well-known cheese having won multiple awards over the years, this is not your typical goat’s cheese. It’s a semi hard, washed rind cheese with a delicate yet moreish sweet, mild flavour. The rind varies in colour from fawn to dark brown and it is common to see some beautiful coloured moulds growing, showing the diversity in the milk and maturing rooms.
It appeals to all with a plethora of flavours coming through including sweet milk and it has a pleasing melt in the mouth texture like a young Gouda. The cheese is named after a friend of our farm owner (like the cheese she is sweet, and very slightly nutty).
This extremely versatile cheese will be an absolute delight on any cheese board, or can be used as a filling inside chicken breasts with spinach, for topping a homemade lasagne and so much more.
Made with unpasteurised milk and vegetarian rennet.
