Baby Katherine is a small individual hard cheese matured over approximately 2 months and regularly washed in local Somerset Cider Brandy to develop its flavour even further than its cousin Rachael. This cheese is firm in texture with a complex and savoury flavour compared to her cousin, Rachael Reserva.
It makes a fantastic addition to a cheese board and can also be grated on top of pasta, salad or almost any meal.
