Lemon Curd Pudding

 
Our curds are extremely versatile, light, clean and fresh flavoured cheese, becoming increasingly popular as it has many uses in the kitchen.
Perfect for making pasta sauces, dips, ravioli, risotto and cheesecakes to name
a few uses.

 

Ingredients:

  • BASE:
  • 10 ginger biscuits 
  • ⅓ cup butter, melted
  • LEMON CREAM FILLING:
  • 1¼ cups double cream
  • ½ cup icing sugar
  • 12 ounces of English goats curd 
  • 14 ounce can sweetened condensed milk
  • ¼ cup lemon juice
  • 2 Tablespoons lemon zest
  • 2 Tablespoons of lemon curd
  • WHIPPING CREAM TOPPING:
  • 1 cup double cream
  • ½ cup icing sugar


Method:


Crush ginger biscuits and add melted butter . Place in one large dish or individual dishes

Refrigerate for 1 hour.

LEMON CREAM FILLING DIRECTIONS:


In a small mixing bowl beat cream for two minutes, and then add icing sugar and beat until stiff. Set aside.

In a large mixing bowl, combine Goats Curd, sweetened condensed milk, lemon juice and lemon zest. Beat in high until creamy and smooth. Fold in lemon curd.

Pour into the biscuit base and top with whipping cream.

WHIPPING CREAM TOPPING DIRECTIONS:

In a medium bowl combine double cream and icing sugar. Beat until firm.
