Crush ginger biscuits and add melted butter . Place in one large dish or individual dishes
Refrigerate for 1 hour.
LEMON CREAM FILLING DIRECTIONS:
In a small mixing bowl beat cream for two minutes, and then add icing sugar and beat until stiff. Set aside.
In a large mixing bowl, combine Goats Curd, sweetened condensed milk, lemon juice and lemon zest. Beat in high until creamy and smooth. Fold in lemon curd.
Pour into the biscuit base and top with whipping cream.

In a medium bowl combine double cream and icing sugar. Beat until firm.
