Rachael Reserva

Made with unpasteurised milk and vegetarian rennet, Rachael Reserva is a longer aged version of our Rachel. It is matured in an "Alpine style" for 12 months, developing sweet and nutty flavours typical of this style. This is a rich and complex cheese, packed with flavour. Aromas are savoury. This is the equivalent of Willy Wonka's everlasting gobstopper - a roast dinner - in cheese form. Eat this as it is to fully appreciate the depth and complexity of flavour in this cheese and then use it to transform dishes to a stratospheric level. 

This beautiful cheese goes well grated on pasta, salads, or atop almost any meal.
