It is matured in an "Alpine style" for 12 months, developing sweet and nutty flavours typical of this style. This is a rich and complex cheese, packed with flavour. Aromas are savoury. This is the equivalent of Willy Wonka's everlasting gobstopper - a roast dinner - in cheese form.
