Glaston Tile is a fresh, young goat's cheese, but with a firmer texture than a curd. It's pre-drained which removes some of the moisture, giving it a more pronounced acidity and a firmer texture which means it can be sliced or diced, making it perfect for fresh starters and salads.
In flavour it is dense, bright and slightly salty. Spread this coarsely onto bread, drizzle on some olive oil and a topping of herbs to make a fresh, summery snack. In the cooler months set some cubes atop roasted vegetables or even crumble into a soup.
Made with unpasteurised milk and vegetarian rennet.
