Fetish and Spinach Spanakopita

Ingredients
Small bunch of spring onions
4 garlic cloves
Butter
Olive oil
1 bag of fresh spinach
3 blocks of Fetish cheese
4 eggs
Black pepper
1 pack of filo pastry -
Method
1. Fry the onions and garlic in butter.
2. Crumble the fetish cheese.
3. Finely chop the spinach.
4. Mix the Fetish, onions, garlic, spinach, pepper and eggs together in a mixing bowl to form a soft consistency
5. Take an ovenproof dish, brush with the remaining butter from the frying pan and add some olive oil.
6. Take the filo pastry and brush with butter/oil.
7. Layer the dish with at least 6 sheets of filo pastry and fill with Fetish and spinach mix.
8. Cover with the remaining filo pastry and brush plenty of butter on top.
9. Bake at 160-170 degrees for 45-60 mins. The Spanakopita is ready when an inserted knife comes out fairly dry.
