Fetish and Olive Stuffed Potato Skins

Ingredients
6 medium sized Russet potatoes
1/4 cup of unsalted butter, melted
1 200g pack of crumbled Fetish cheese
3/4 cup of sliced black olives
1 large plum tomato, diced (optional)
Salt, pepper and parsley to season
For meat option: add cooked ground beef / cooked chicken breast strips / cooked turkey / cooked bacon -
Method
1. Heat oven to 190-200 degrees Celsius.
2. Bake the jacket potatoes until soft in the middle and cool for 10 minutes.
3. Cut the cooled baked potatoes in half, lengthways, scooping out the centre, leaving 1/2 inch rim of potato inside the skin.
4. Brush butter over all sides of the potato skins. Place cut sides down on a baking sheet. Bake for 6 minutes.
5. Turn the skins and bake until golden brown (further 6-8 minutes).
6. Meanwhile, combine the Fetish cheese, olives and tomatoes, if using and any meat filling.
7. Spoon mixture into the potato skins and return to the oven.
8. Heat until the cheese begins to melt - about 5 minutes.
9. Serve warm
