Sheeps' Milk Cheese

PAVÉ COBBLE

Moulded into a truncated pyramid, the paste is springy and soft, becoming meltingly creamy with age.
With a light coating of ash, the geotrichum and glaucum moulds grow on the rind developing silvery grey rind at first, then becoming dominated
by blues and greens.
On first taste, notes of sweet cream emerge, followed by nutty flavours and a slight lanolin gaminess that deepens the complexity with the age of the cheese.

A Ewes milk version of our well
known Rachel cheese.
This is a Semi hard Cheese aged to around 3 months old.
This cheese has a colourful orange/brown rind.
This cheese has a medium, mellow, nutty flavour with hints of caramel.

BURROW MUMP

This Semi hard Cheese is aged to around 8 weeks, has a close, firm texture and is washed in Somerset Cider Brandy.

Named after a local land mark which rises above the Somerset levels, as the does the sweet, nutty flavours
of this cheese which continue to delicately rise on the palate.

This is a soft fresh cheese made from sheeps' milk with a creamy, savoury flavour.

LITTLE SHE

This is a soft white cheese with a bloomy rind. Made in the style of a brie or Camembert this cheese will soften as it ripens. This cheese has a mild flavour becoming more pronounced and the rind can become more colourful as it ages.

FETISH

This is our take on the well-known Greek cheese, matured in brine for around 3 to 4 months.

This cheese has a nice rounded flavour.
This cheese is sold in its own brine.
